In fact, this entire homemade vanilla pudding recipe only calls for 1 tablespoon of honey. And it’s so delicious that your whole family will be begging for more!
We generally pair this vanilla pudding recipe with a coconut flour vanilla cupcake recipe and some strawberries for an amazing paleo strawberry shortcake. Yum!
Homemade Vanilla Pudding: Paleo, GAPS
This recipe comes together very quickly, making it an amazing last minute dessert idea! You likely have everything you need to make it right now, let’s get started!
In a small sauce pan, add 1/2 cup of water and sprinkle gently (to avoid clumping) 1 tablespoon of gelatin over the water. We use the Great Lakes brand grass-fed gelatin.
Allow the gelatin to bloom for 5 minutes in the cold water.
Place the gelatin water over low heat and whisk thoroughly just until the gelatin is dissolved. Remove from heat.
In a medium sized mixing bowl, combine remaining ingredients and whisk to combine. Add the gelatin mix to the mixing bowl and whisk to combine well.
Cover the mixing bowl with plastic wrap and place in the fridge for 15 minutes. Whisk well at 15 to check texture.
If the texture is not thick enough yet, place the bowl back in the fridge and check it every 15 minutes, whisking each time.
**Whisk pudding for about 1-2 minutes before serving to loosen the mixture.

- 1 Tbsp gelatin
- 2 Cups milk
- 1 Tbsp honey
- 1 tsp vanilla
Sprinkle gelatin in water in a sauce pan, bloom for 5 minutes. Dissolve gelatin in water over low heat, whisk until gelatin is dissolved and remove from heat.
Mix remaining ingredients in a medium mixing bowl. Add gelatin water to milk mixture and whisk thoroughly.
Place mix into the fridge and whisk every 15 minutes until it thickens (15-45 minutes).
Whisk pudding for about 1-2 minutes before serving. It will loosen the pudding perfectly.
